Our olives are hand-picked from mid-October to late November. Once picked, the salting phase begins immediately in saturated brine and a little vinegar and then fermentation. After a period of "maturation in brine", they are selected, desalted and seasoned according to a traditional recipe with extra virgin olive oil, oregano, chilli pepper, garlic. In this version the olives are enriched with carrots, celery, onion. This giardiniera olive salad is exceptional to serve as an appetizer or to accompany delicious aperitifs, try them with our cured meats and cheeses.
