"Cunzate" green olives
Seasoned green olives, also known as "Cunzate Green Olives", are part of the Sicilian traditional preserves. Our olives are hand-picked in the period from mid-October to the end of November. Once harvested, the salting phase in saturated brine and a little vinegar begins immediately, followed by fermentation. After a period of "maturation in brine", they are selected, desalted and seasoned according to a traditional recipe with extra virgin olive oil, oregano, chili pepper, garlic. Seasoned green olives are exceptional to serve as an appetizer or to accompany delicious aperitifs, irresistible with our cured meats and cheeses. Word of "Le Bontà di Villa Dafne".
