Seasoned green olives, also known as "Cunzate Green Olives", are part of the Sicilian traditional preserves. Our olives are hand-picked in the period from mid-October to the end of November. Once harvested, the salting phase in saturated brine and a little vinegar begins immediately, followed by fermentation.
