Ricotta is the fresh product, typical of Sicilian dairy art, creamy and very soft, pearl white in color. The shape is truncated-conical due to the container "la fascedda" that is used for packaging. Ricotta is the queen of Sicilian dairy products, and is ideal for your daily diet. Low in fat and rich in proteins, Ricotta is excellent for all occasions: to eat for breakfast or during a main meal. It goes magnificently with dry pasta or simply with durum wheat bread, or in combination with raw or cooked vegetables, or with a little honey from "Le Bontà di Villa Dafne" for a final meal that you do not expect.

Quantity

The preparation of ricotta is a ritual that takes place every day. In a large pot "a quarara" the whey is poured, that is the liquid left over from the preparation of the cheese "a' llacciata", which brought to a temperature of about 84°C, with the addition of salt and milk, ricotta is obtained. The name in fact derives from the Latin "recoctus" which means cooked again, precisely because of the production process that the whey left over from the processing of milk into cheese undergoes.
