calf's loin
calf's loin is an ideal cut for pan-frying or roasting. Our calves were born and raised in Sicily, in an area between the low Madonie and the Sicani Mountains between the municipalities of Alia, Castronovo di Sicilia and Valledolmo. Raised in full respect of animal welfare, their diet is based on hay, straw and cereals, so as to have tender meat with a uniform color. Our meats are also properly aged after slaughter in refrigerator cells at controlled temperature and humidity, so as to obtain maximum tenderness and melting.
